Easy Thanksgiving Recipes
Looking for easy Thanksgiving recipes that won’t take too much time to prepare but will get you great reviews from your family? Or, have you been asked, at the last minute, to bring a dish to a Thanksgiving dinner? Here are three easy recipes (Sweet Potato Casserole, Cole Slaw, and Pecan Pie) that I made today for Thanksgiving at my son’s tomorrow. In just under an hour, you can have these Thanksgiving recipes ready, too!
Pecan Crunch Sweet Potato Casserole
Ingredients:
- 3 cups mashed sweet potatoes***
- 1 cup brown sugar
- 2 eggs, lightly beaten*
- 1 teaspoon vanilla
- 1/2 cup milk*
- 1/2 cup melted butter*
Topping:
- 1/2 cup brown sugar
- 1/3 cup flour
- 1/3 cup melted butter*
- 1 cup chopped pecans
Preparation:
- Combine first 6 ingredients.
- Pour into a buttered 1 1/2 to 2 quart casserole dish.
- Mix remaining ingredients together and sprinkle over top.
- Bake at 350 degrees for 30 to 40 minutes, until hot and browned.
Serves 6 to 8.
Cole Slaw
Ingredients:
- 1 medium cabbage
- grated carrots
- 1/4 tsp salt
- 1/2 tsp celery salt
Dressing:
- 1/2 cup sugar**
- 1/3 cup vinegar
- 1 cup mayonnaise*
- 1 teaspoon prepared mustard
Preparation:
- Mix vinegar and sugar to dissolve sugar.
- Add mayonnaise and mustard to sugar mixture.
- Stir well.
- Refrigerate.
Nana’s Pecan Pie
Preheat oven to 350°F.
Ingredients:
- 1/2 cup melted butter*
- 1 cup white sugar
- 1 cup light corn syrup
- 3 eggs, lightly beaten
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1-1/3 cups pecan pieces
- Unbaked 9-inch pie shell
Preparation:
- Mix together the butter, eggs, brown sugar, corn syrup, salt and vanilla.
- Whisk until smooth.
- Blend in pecans.
- Pour into pie shell.
- Bake at 350°F for 40 to 45 minutes.
*For healthier recipes with less calories, substitute lighter ingredients such as light mayonnaise, I Can’t Believe It’s Butter, and egg whites or others as desired.
I doubled the Pecan Pie recipe and made two pies. Poppy ate half of one of the pies tonight! (I must admit, I helped…just a little…) How can you tell a Pecan Pie is done? It doesn’t jiggle.
**Add sugar gradually for your own taste.
***Use canned yams, heat and mash
